Pancit Palabok

This is my version and improvised pancit palabok. I know for sure most of my kababayans know about this food. Pancit palabok is made up of rice noodles, shrimps, crushed or ground pork rind, hard-boiled egg and fresh minced green onion. Adding some spices and vegetables, I also cooked it with garlic, onions, ginger and bell pepper sometimes. Sad to say, I don’t have any tinapa (smoked fish) flakes everytime I prepare it.

Here is my homemade Pancit Palabok. I am thinking of cooking pancit tomorrow. I will see if I have time to prepare it.

Pancit palabok are rice noodles cooked in anato seeds, usually served with hard-boiled egg, chicharon, spring onions, and kalamansi.

Your Pancit Palabok looks delicious! I have a confession to make. I haven’t tried cooking pansit dishes before, only pasta dishes, and one of these days, I would love to whip up something like this for my family.
